Craft & Crew Hospitality acquired the former Galaxy Drive-in and plan to offer St. Louis Park, Minnesota a new, unique outdoor dining experience. The new concept utilizes much of the existing building, site and canopy structures, but also increases the outdoor dining area with two additional four-season pergolas and green space. Programming keeps the existing kitchen, restroom and office as-is, but adds a new walk-in cooler/ freezer, covered and uncovered outdoor dining, bike racks, green space and outdoor lounge. The design is a retro take on a modern finish palette, with pops of wood tones and branding to support the Craft & Crew standards. Thielen & Green provided full scope architectural services from programming through construction administration under an integrated project delivery with Dering Pierson Group. Studio Grey provided branding and interior design support, with Boelter heading up the equipment design.
This project utilized full BIM modeling for early design review, project coordination and clash detection, with a goal to limit field changes and expedite construction timelines.
